Felipe Sardi and Elisa Maria Madrinan of La Palma & El Tucan are pioneering coffee producers, focusing on regenerative farming and using the land to organically grow and produce their own coffees. They have made a name for themselves through pushing the boundaries of experimental processed coffees in Colombia.

Microlot PTMLB23031 is part of their ‘Neighbours and Crops’ Collection; a community program, empowering and activating nearby coffee producing families. La Palma invest time and resource to support these families through expertise and education. when the time comes; they purchase and process the high quality cherry that these communities produce. 

The coffee was chosen to undergo a new process by La Palma, named ‘pH Clarity’. this process aims to drive innovation in specialty coffee production by focusing on pH control during the fermentation process. pH is a critical factor that influences microbial activity and enzymatic reactions during fermentation, which ultimately impacts the flavor development and quality of the coffee. pH adjustment techniques are implemented to maintain the desired pH range during fermentation. This involves the addition of specific acidifying agents or buffers to regulate pH levels. By carefully controlling the pH, the process can influence the growth and metabolic activities of particular microorganisms, promoting the development of desirable flavours and suppressing the growth of harmful or undesirable microbial species. 

The meticulous control of the entire fermentation process results in an extremely clean, washed processed coffee with an extraordinary and elegant cup profile.
