The Chelba from Ethiopia’s Gedeo zone is a perfect representation of washed Ethiopian coffee.

 Like all washed coffees in Yirgacheffe, this coffee has light and lively citrus notes, with good clarity of flavour. This Chelba is grown by around 700 smallholder farms, each owning approximately 150-200 trees. Within the Yirgacheffe district; which is a very distinctive geographical region, there is the highest concentration of high elevation areas in Africa. 

The ripe cherries are all sorted and processed at the centralised Chelba Mill, as is common across Ethiopia due to its smallholder farm structures. The cherries are fermented for 36-48 hours underwater depending on several environmental factors. African drying tables are used to dry the sorted parchment for two weeks until the moisture level reaches 12%. All the water used in the wet process is sourced from the Chelba River, which originates high up in the Mendebo mountains of Southern Ethiopia.
