Our second Kenyan for the season has landed - this time from the Embu county of Central Kenya. The Gikirima Factory is located on the slopes of Mount Kenya where the best Kenyan coffee is found.

When we cupped this coffee we discovered a very citrus based Kenyan; with currants, apricot and hints of sweet cherry tomato. We likened it to drinking a lemon fruit tea, layered and sweet.

This particular lot that we have bought is an AA Grade lot, which represents the best grade available within the Kenyan coffee classification system. 

This coffee is wet-processed, which is the method most well associated with Kenyan coffees, and disc-pulped before fermentation. The coffee is fermented overnight to break down the sugars, carefully cleaned, soaked and ultimately spread out on the raised drying tables. Time on the drying tables depends on climate, ambient temperature and total production volume undergoing processing. Drying can take from 7 to 15 days in total. Frequent turning and sorting will happen during the drying stage.

Kibugu FCS is the Cooperative that is responsible for running the Gikirima factory, and as such, have programmes in place which promote sustainable practises and advancement of of its members. Adhering to strict quality control measures the cooperative has a field committee responsible for carrying out all activities associated with coffee production such as weeding, pruning, spraying, application of fertilizer, mulching and provide technical advice.
