A culmination of experimental natural processing has led to this very special microlot offering. Borrowing its name from Cognac in which the X.O. denomination refers to quality and age, this Natural lot has gone through a meticulous production process, with its characteristics enhanced and amplified through a rigorously controlled fermentation process. This lot is hand-picked through strict selective picking, and left to ferment as whole cherry for 30 hours under controlled temperatures. The result is an aromatic, concentrated cup, with intense winey qualities. This natural comes from ‘Potosi’ in Caicedonia; the original farm owned by Rigoberto Herrera and his ancestors since 1940, and it is one of the most interesting naturals we’ve tasted this season. Over the past 3 years we have seen this lot improve, and yet again we are thoroughly impressed by this incredible cup profile.
