Tom selected this coffee for its floral confectionary aroma, intensity, and sweetness. When selecting competition coffees the main components Tom searches for are, “clarity and balance of desirable flavors, (like berries, candy, florals), and a hook. A hook is something fresh, something new, something special”.
Behind the coffee, El Diviso forms part of a collective of producer friends comprising of Zarza, El Diviso and Las Flores. In 2023, Tom also used coffee from Las Flores (Chiroso) to win the Australian Brewers Cup. We love working with this group of talented producers.

Brew Ratio - 1:16
18.7gram dose, (10 grams Ombligon, 8.7 grams Panama Janson Gesha Lot 130 Natural)
Total water - 300 grams
Custom-remineralised water (80ppm)
Kettle 1: 93°C
Kettle 2: 88°C
Pattern - Drip assist
1st Pour (Kettle 1) - 50 grams
2nd Pour (Kettle 1 & 2 simultaneously) - 150 grams (Scale reads 200 grams)
3rd Pour (Kettle 2) - 100 grams (Scale reads 300 grams)

COFFEE 12g
WATER 180ml at 93 - 96° (Just off the boil)
1. Start with the Aeropress upside down (inverted).
2. Bring filtered water to a boil and let it sit until it cools to temperature range, (approx. 1min).
3. Rinse filter to wash out any paper flavour after placing it in the round lid and set aside. Preheat Aeropress with hot water at the same time.
4. Add ground coffee to the Aeropress chamber. Your grind size should be medium to medium fine (similar to sand or slightly finer). Place on scales and tare.
5. Start the timer and add 180ml of water, filling to the top of the Aeropress, gently stir. Attach the lid and let it brew for 1:45 minutes.
6. Place cup / jug upside down over the top of the Aeropress and carefully flip over so the cup is on the bottom and the Aeropress is sitting on top. *BE CAREFUL*
7. Slowly press out into your jug / cup and serve.

COFFEE 45g
WATER 750ml at 93 - 96° (Just off the boil)
How to make plunger coffee
1. Bring filtered water to a boil and let it sit until it cools to the ideal temperature range, (approx. 1 minute).
2. Pre-heat the French Press by rinsing with hot water.
3. Add ground coffee to coffee plunger. Your grind should be coarse, larger than sand granules.
4. Pour 100ml of water into the plunger and stir to saturate the grinds. Try to ensure that all grounds are wet.
5. Pour the remaining water, 650ml into the plunger and stir again.
6. Attach plunger lid to retain heat but do not push down. Leave to brew for 3 minutes.
7. Slowly plunge and serve.
Total brew time 4 – 5 minutes.
Tip: 60g of coffee to 1L of water is the recommended plunger coffee ratio, depending on the size of your plunger / French Press, your ratio of coffee to water will need to be adjusted. E.g. 15g for a 250ml sized plunger.

Learn to make amazing, espresso-style coffee in a moka pot.
SERVES 1-2
COFFEE 15g (for a 3 cup stovetop)
WATER 120ml
1. Fill the bottom chamber of the stovetop brewer, just under the valve with filtered water, using 120g for the 3 cup size.
2. Place the metal filter over the base and fill it with 15g fine-medium ground coffee.
3. Place the top chamber back and put the stovetop over the heating element.
4. Allow the stovetop to boil until all the water has passed through the coffee from the bottom chamber.
5. Turn off the element and decant the coffee in your favourite cup.
*The coffee is intense and high in concentration of flavours, this gives you the opportunity to dilute it with hot water or milk/milk alternative to your desired taste.

How to make V60 Pour Over coffee
Our V60 Pour Over brew guide will show you how to nail this brew method.
SERVES 1
COFFEE 15g
WATER 250ml at 93 - 96° (Just off the boil)
1. Place the paper filter into the cone and rinse with hot water to wash out any paper flavour. This will also pre-heat the cone.
2. Place V60 and cup/server on scales.
3. Bring filtered water to a boil and let it sit until it reaches temperature range.
4. Add ground coffee to the cone and settle for an even coffee bed. Your grind should be a Medium grind size (similar to sand). Tare scales.
5. Pour in enough water to just cover coffee grinds, (approx. 50g). Start timer.
6. Wait 30 seconds and add another 100g of water in a circular motion. Once half the water has almost drained through (approx. 15-20 seconds), add the reminder of water (another 100g).
7. Decant and serve.
