Bolivia Las Alasitas Lactic Natural Gesha Filter - Single Origin.

This Gesha micro-lot comes from Las Alasitas farm, owned by the Rodriguez family. It lies on a lush, steep mountain valley outside of the town of Caranavi. Pedro Rodriguez and his family began to invest in their own plantations in 2012, foreseeing the challenges of the Bolivian coffee industry and the fear that coffee production would be severely impacted.

Pedro hires pickers from the Villa Rosario community to carefully handpick the coffee during the harvest. These pickers are trained to select only the very ripest cherries, and multiple passes are made throughout the season to ensure coffee is picked at its prime.

This Gesha was processed with a strong influence from the wine industry. For the farm’s special varieties, special blue aerated crates transport the cherries to Agricafe’s state of the art mill Buena Vista in the evening. After being inspected and weighed, the cherry are sorted by weight using water, and floaters removed. Following this, the cherries are placed on a conveyor belt and disinfected, in a similar process used for wine grapes, and then placed whole, with their skin intact, to ferment under controlled temperature and pH conditions in the family’s brand new custom-built stainless steel tanks. For this lot, onsite oenologist Iván Hugas prepares a solution (Mossto) with a carefully calculated level of lactic bacteria harvested from the farm and cultivated in a controlled environment; and adds it to the tanks — catalysing a controlled fermentation that lasts 48 hours. Encouraging the production of lactic acid is key, as the Rodríguez believe this step adds a silky mouthfeel and creamy character to the coffee’s flavour profile.
