Aberlado Medina and his family have been growing coffee for 3 years, living and producing coffee at Finca Girasol during that time. He would like to pass on a key message; that the production of quality coffee requires a lot of work, love and effort.
Aberlado is producing excellent specialty lots, and acquired his knowledge thanks to the teachings of neighbours, and with instruction from Didier Javier Pajoy, an integral part of Osito, Colombia in La Plata, Huila.
This lot was selectively hand-picked, floated and sorted; fermented in cherry for 36 hours; pulped and floated; fermented underwater in open tiled tanks for 48 hours; washed and dried under partial shade in marquesinas for 7-10 days.
This coffee stood out to us with its complexity and acidity. Not only does it have the typical ‘spice’ note that we enjoy of Pink Bourbons, but the coveted malic acidity and strong sugary characteristics of this unique variety.
