Brazil Airuma Espresso
This small lot is harvested from the heart of Bahia - the Chapada Diamatina mountain range - nicknamed “Airuma”. It is produced on Fazenda Progresso, on which 530 hectares of the property are dedicated to coffee. This land is divided up into different plots, which are processed separately and in different ways.
This farm has featured in multiple years of Cup of Excellence (2015, 2017) and it’s not hard to imagine why. The owners’ of this farm; the Borre family, have always done things to the utmost highest standard. From their humble family roots of extremely successful potato farming since 1984 to this day, they gradually sought to diversify their crop and begin focussing on coffee in 2005.
This Airuma lot is carefully picked at the peak of ripeness, carefully dried for 22 days on aerated beds in a greenhouse, and turned regularly to ensure the coffee dries evenly. After 22 days it is placed in a mechanical dryer at low heat for 10 hours. Naturals have only been in production here since 2017, but the results have been outstanding since.
