This lot is grown on El Salitre farm, owned by Johnny Alvarado and his family. It is the first naturally processed lot to come from their family micro-mill named Corazon De Jesus. This is a family affair, incorporating four coffee producing farms across the Brunca region.
Harvesting the ripest cherries to start, polypropylene bags are used for a 2 day in-cherry pre-fermentation stage under shade. On the third day the cherries are laid out on patios and piled and covered at night, repeated over ten days. During the heat of the day, the cherries are raked three times, promoting airflow. The cherries are moved to African beds for a final 15 days until optimum moisture is reached (10.5%)
This year they have secured 5th place in the Costa Rican Cup of Excellence, and is a testament to their dedication and commitment to producing world-class coffee.
