This coffee was used by Tom Hutchins to win the 2025 Australian National Brewers Cup Competition. An incredibly unique coffee which enabled him to showcase his signature brewing method.
Fermentation genius Edwin Norena produces this incredible Sudan Rume at his main processing centre, Campo Hermoso. The cherry starts with a 72-hour fermentation to produce mossto, while Edwin creates a hop-water ferment using Enigma hops; grown and developed specifically in Tasmania. After fermentation, the coffee is pulped and undergoes another 72-hour ferment with the mossto and hop water to produce an intensely aromatic, fruit forward, competition winning cup profile.
