Father and son team Juan Carlos Diaz, and Carlos Julio Diaz produced this special lot from their farm El Naranjal

Part of South-West Tolima, El Naranjal is remote. With no road access to the farm, it must be accessed across rugged terrain either on foot or hoof. The farm has been in production and owned by Carlos Julio since 1994 and has 8 hectares of producing trees.

Laureles community where the farm is based, is traditionally known for cattle, sugarcane & vegetables, with coffee only being introduced in the last 30-40 years. Land here was recognised to be more affordable than that of Planadas and Chaparral in Tolima South; more traditionally ‘coffee country’. Higher elevations were also believed to be less desirable and lower yielding than that of lower, however in more recent times there has been a recognition of the quality that can be grown own these lands, especially in places like El Naranjal.

This lot was selectively hand-harvested, mainly by the Diaz family. They do outsource during peak harvest, and offer pickers 3 meals a day, as well as 15-20% more payment for works to incentivise them to come to the farm. They prefer return workers as they have prior experience for cherry selection.

This lot has been pre-fermented ‘in cherry’ for 24hrs prior to washed processing. It is then pulped and fermented in bags for 36hrs then transferred to a tank for another 12 hours. This extended fermentation cycle adds depth of flavour to the cup profile.
