At the forefront of innovation sits producer Rigoberto Herrera of Cafe Granja la Esperanza the producer of this lot. This rare coffee was planted and grown on Las Margaritas farm, which is one of five farms owned by Rigoberto and his brother Luis. They run a family business as third generation coffee producers, with Granja La Esperanza established almost a century ago by their grandparents. This continuation over the years to push boundaries of varietals and experimental processing has produced year after year of competition winning cup profiles.

Las Margaritas doubles as their 'varietal garden', with a multitude of varietals planted like patchwork across the landscape. A culmination of experimental processing has led to this very special microlot offering from Cafe Granja La Esperanza.

Sudan rume is an exotic varietal that is extremely difficult to cultivate. Once Cafe Granja was able to source the seed stock, it was planted at Las Margaritas where the growers were happy to discover that it was ideally suited to the climate and conditions of the area. Before this varietal was brought to Las Margaritas, multiple soil studies were made finding the best conditions at an elevation between 1.700 and 1.800 MASL.

As the name suggests, Sudan Rume originates from the Boma Plateau in Southern Sudan, near the Ethiopian border. It is an heirloom Arabica coffee, often used as a component in hybrids because of its prized flavours and moderate resistance to disease. Its one downfall is its low yield, making it rare as a standalone drink.

Picking occurring at the peaks of harvest ensure the cherries in this natural processed lot are at their prime before processing. These cherries are fermented dry in tanks with extreme care within a closed facility, to control ambient temperatures. This enhances and lifts the flavour of this unique cup profile.
