Colombia C.G.L.E. La Esperanza Mandela X.O. Natural Filter - Single Origin

Mandela is a variety exclusive to Cafe Granja La Esperanza. Developed over several generations, this varietal originated from caturra that had been crossed via manual pollination, an incredibly laborious task. These subsequent generations were then crossed again with Timor Hybrids, and Ethiopian Landrace varietals such as Sudan Rume, and Villa Sarchi. These later generations were cultivated or culled based on productivity and cup quality attributes, resulting in multi-trait mass selection through generations.

For this process, cherries are rigorously selected during harvesting, and also hand sorted after harvesting. The brix levels on the cherries are measured during post-selection to collect the cherries with highest sugar content for this process. Once placed within tanks, the lid is sealed to prevent further cherry exposure to air, and left for 168 hours.

After fermentation, the coffee cherries are left for 48 hours in mechanical dryers and then passed to solar dryers for 6 – 7 days until optimal moisture levels are reached; usually between 11-12%

This controlled and sealed fermentation method results in the creation of incredibly winey tropical fruit flavours, in combination with highlighting the unique spice and berry characteristics of the Mandela varietal.
