Sourced through a partnership with Lohas, this decaf coffee reflects the dedication and expertise of producer Jhoan Vergara, a third-generation coffee farmer born in 1996 in Pitalito, Huila. Jhoan owns and operates Finca Las Flores in Acevedo and combines traditional methods with innovative processing; including careful thermal shock and washed anaerobic fermentation at the Peñas Blancas Mill, a facility he co-founded alongside his friend, Nestor Lasso.
Jhoan is recognised for his commitment to quality and sustainability, producing coffees that are vibrant, juicy, and rich in distinctive fruit and floral notes. His work has garnered international success, and he continues to pioneer new techniques while maintaining the health and productivity of his farm.
This Pink Bourbon from Las Flores undergoes the Swiss Water Process for decaffeination, a gentle, chemical-free method that uses pure water and time to remove caffeine while preserving the coffee’s original integrity and aromatic profile.
