Kenya Karatu AB Filter - Single Origin.

This coffee we purchased through Vava Angwenyi; founder, exporter, producer and author. She is a sustainable farming advocate, and business owner. Vava runs a social enterprise; Vava coffee ltd. that exports & consults on coffee value chains. The company ensures sustainable livelihoods for the people and communities in which it works. Vava’s vision is to challenge the status quo and promote positive social disruption within the coffee industry. This vision comes from an inborn passion for transformative change and a drive to promote the sustainable production of coffee by tracing the production of high quality coffee beans to the independent smallholder coffee farmer. It’s taken her many years to build partnerships with hundreds of smallholder farmers, but now she represents many different growing regions of Kenya to foreign buyers advocating for better incomes for producers while creating the tools they all need to access these incomes.

Smallholders selectively handpick only ripe cherry and deliver them to Kahindu Factory. At intake, the Cherry Clerk oversees meticulous visual sorting and floating, accepting only dense, ripe cherry. After intake, cherry is pulped and fermented for approximately 12 hours. Following fermentation, parchment is laid to dry on raised beds. Workers rake parchment frequently to ensure even drying. They cover drying parchment during the hottest time of day, to maintain slow, even drying and at night, to shelter parchment from moisture.
