The Flores family has grown coffee in Cajamarca since the 1970s, with Finca El Morito founded by patriarch Faustino Flores in 2009 after the family relocated to San Ignacio. Today, around 70% of production comes from family estates and the remainder from neighbouring producers in the Flores Chilcon community, with the farm placing multiple times in Cup of Excellence, most recently in 2022.
Faustino focuses on innovative cultivation and new varieties, building on a legacy of Caturra Amarillo and recent experiments with Geisha and Marshell. This Geisha microlot is selectively harvested at over 20° Brix, double fermented; 24 hours in cherry, and 48 hours in mucilage, then washed and dried under shade in solar dryers for 20–25 days.
