Colombia Las Flores Chiroso Filter - Single Origin

This is the coffee that Tom Hutchins used to win the Australian National Brewers Cup Title, and took to the worlds to compete in the World Brewers Cup Championship in June 2023. Tom represented Australia in Athens, Greece, and we couldn't be prouder of his success, and being able to showcase this coffee. 

Finca Las Flores is a 14.5 hectare farm in the village of San Isidro, in the city of Acevedo in the Huila department. The Ayure family started their farm in 1990 with 18,000 coffee trees. They continued to grow until they reached 90,000 coffee trees.

After participating in the Cup of Excellence in 2006, the Vergara family began their journey into specialty coffees. Today, owner Edilberto Vergara and his son Johan are working to adjust production and improve post-harvest processes.

This lot begins with cherries being picked at maturity, washed and floated, then oxidised for 48 hours. The cherries are then introduced into tanks submerged in water and the temperature is raised from 15°C to 50°C. An anaerobic fermentation phase begins in hermetically sealed containers. Yeast is added to modulate the profile through the alcoholic metabolism of the microorganisms for 48 hours. Drying starts with a fast process at the beginning to fix flavors and then slow to preserve the physical integrity of the seed. It is a combination of mechanical 24 hours and then solar patio for 2 weeks. The cherries are stabilized for 4 weeks in closed plastic bags.

Coffees from Huila tend to have brighter acidity and stronger fruit notes. Alongside innovative practises, the Vergara family have honed their processing methods and isolated unique qualities of their cherries to create coffee with incredibly unique flavour profiles.

This is an amazing coffee bean with a very fruity flavor, especially at low temperatures.

Incredible

This coffee is unlike anything I've ever tasted before. Definitely not your daily drinker - this one's for special occasions. I watched Tom Hutchins World Brewers Cup presentation where he brewed this coffee just prior to making it for myself (google it - worth a watch) and felt like I was with the judges tasting this amazing coffee. Very sweet & juicy with strong notes of strawberry. I even got a bit of fresh mint that Tom mentioned in his presentation.

i do pour over in the office and people would come in and ask me what it is. The fragrance and the notes are very nice.
